Hawaiian Poke
Poke (pronounced more like “Poke - ee”. Rather than poke as in poke you with a stick ;-) )
A traditional Hawaiian dish of raw diced fish that is marinaded in sesame and soy. It is now starting to show up in the UK in poke bars. I was lucky enough to sail to Hawaii and spend a fun week there. The poke is epic. Once you have the taste for it, you just cannot stop!
It is also super easy and super healthy too. Which are always extra bonuses!

Ingredients
300g sushi grade fish - diced. I used salmon this time, but works well with tuna, wahoo, mahi mahi and even some shellfish. Just check with your reputable fishmongers first about the fish being sushi grade.
4 spring onions finely sliced
1/3 cucumber, deseeded and finely chopped
3 tablespoons sesame oil
3 tablespoons soy sauce
Optional extras; ginger, honey, chilli, different vegetables raw and diced
Serving suggestion: Rice and crunchy vegetables or served in a taco shell.
Method: simply mix the ingredients together, allow to marinade from 30 minutes to 4 hours.
