Roast Fennel with Wild Garlic and Parmesan
A super QUICK midday side salad dinner/lunch
I had this with some grilled chicken - marinaded briefly with some lemon, and wild garlic, then grilled.
Also a great one for using the BBQ!
How to?
Ingredients
2 Fresh Fennel Bulbs- cut lengthways in to 6 pieces
3 Wild Garlic leaves
Juice of half a lemon.
Olive Oil
Fresh Parmesan
Method:
Chuck the fennel in to a roasting pan drizzle with olive oil, and tear up 2 of the garlic leaves and chuck in too, give it a good mix so all coated.
Bake in the oven for about 40 mins, or grill on the bbq, until sweet and golden.
Serve with an extra drizzle of olive oil, squeeze of lemon and a good grating of fresh parmesan. Season with salt and fresh black pepper.
