Easter Biscuits - kid fun version & the traditional versions!
This makes approximately 28 biscuits! (shape, and size dependent). We split the mixture between myself and my two girls - they had the simple dough creating fun shapes and covered them in lemon icing sugar with wild and wonderful colours. For the traditional version i added currants and sprinkled sugar on half way through the baking.
I definitely think the traditional version is the tastiest, but the kids had a lot of fun with theirs!
Ingredients
200g butter soft
125g caster sugar
2 large egg yolks
400g plain flour
1 level teaspoon mixed spice
1 level teaspoon cinamon
2 - 4 tablespoons milk
Traditional biscuits:
1-2 cup of currants
caster sugar
egg white
Kid decorative biscuits:
250g icing sugar
1-2tsp lemon juice
1-2 tablespoons cold water
natural colourings - add a few raspberries or blackberries.
Method:
Beat together the sugar and butter until fluffy
Beat in the egg yolks
Sieve together the flour, cinnamon and mixed spice. Slowly add it to the mixture, until a dough is formed. If you are only doing the traditional version, you can add the currants in now. Add the milk so that it creates a smooth ball of cookie dough. If you are doing a mix of versions halve your dough and add the currants to one of the balls.
Set aside to rest in the fridge for around 30 minutes.
Turn oven to 170* fan. Line and grease 3 x baking trays.
Dust your counter with flour and roll your dough to about 5mm and cut in to your chosen shapes!
Bake in the oven for 10-15 mins. NB if you are doing the traditional biscuits, take them out of the oven half way, brush with egg white and sprinkle the caster sugar on top, put them back in the oven.
Allow to cool before decorating.
KIDS ICING:
Mix together the ingredients, decorate in whatever wonderful ways you desire!
