Eel Sauce & Spicy Mayo
Dont be put off by their names! They are both delicious and versatile and can be the extra bit of difference that you need for your BBQ.
Spicy Mayo Sauce (orange sauce sometimes served with sushi)
Some people enjoy this sauce with their sushi, especially with the tempura shrimp rolls.
It is also a YUMMY sauce for your burgers and is super easy to make.
1/2 cup mayonnaise (ideally Japanese - such as the brand Kewpie)
2 tablespoons Siracha hot sauce (to taste)
1 teaspoon fresh lime juice (otpional)
Whisk it all together, taste and add more sriracha, mayo or lime juice to taste.
In an airtight container it will last 1 month in the fridge.
Eel Sauce - Unagi Sauce
A bit like a balsamic reduction with lots of yummy umami flavour. SOOOooo tasty and very moorish.
It doesn’t actually have any eel in it and often works as a basting for eel sushi. It is DELICIOUS with sushi or with grilled fish/meat/vegetables.
1/2 cup Japanese soy sauce
1/2 cup sake
1/2 cup mirin
1/4 cup sugar
Place all ingredients in a pan. Bring to a simmer for 10 -15 minutes until it has reduced by about half. If you want it to be thicker, allow it to simmer some more.
In an airtight container it will last 1-2 months in the fridge. I like to keep mine in squeezey bottles. They make it easier to jazz up the plate!
