Elderflower and rhubarb cordial
I took the girls elderflower picking after school this week ... we didn’t manage to make the cordial together this time. But it is easy to make and is totally worth it!
Great for summer day refreshments, ice lollies, drizzled on a cake or stew some more rhubarb in it and serve with a good dollop of ice cream.
INGREDIENTS
400g sugar
1 litre water
2 rhubarb sticks
2 x lemons zest and juice
25/35 elderflower heads
METHOD
1. In a pot, over heat dissolve the sugar in the water.
2. Add the rhubarb and gently cook until soft.
3. Add lemon zest, lemon juice, and elderflower.
4. Leave to infuse for approximately 24-36 hours.
5. Strain the cordial through a clean muslin cotton cloth or a coffee filter will probably do the job too.
6. Store in an airtight bottle.
Will last at least a couple of weeks, if you don’t finish it up before. :-)
