RECIPE
Sweet Potato Cakes, Poached Eggs and Salsa
Great for breakfast and great for dinner!
EQUIPMENT -
large bowl
medium bowl
sharp knife
fork or potato masher
microwave or steamer or pan with lid for steaming potato
frying pan
frying pan with lid (for poaching the eggs)
INGREDIENTS
Egg (as many as you would like to eat)
Spinach and fresh herbs such as mint and coriander
Avocado (optional if you like avocado ;-)
Potato cakes: (makes 6 medium potato cakes)
1 large sweet potato
1/2 cup coconut flour
1/4 cup breadcrumbs
2 spring onions
small handful of fresh mint
2 tablespoons soy sauce
1 teaspoon of miso paste
sunflower oil
2 teaspoons olive oil
1 egg to bind
Salsa:
2 large tasty tomatoes
1/2 red onion or 2 small red shallots
1 lime
sesame oil
small red chilli - to taste
1 small garlic clove
small piece of fresh ginger
