Sweet Potato Cakes, Poached Eggs and Salsa

Great for breakfast and great for dinner!

EQUIPMENT -

  • large bowl

  • medium bowl

  • sharp knife

  • fork or potato masher

  • microwave or steamer or pan with lid for steaming potato

  • frying pan

  • frying pan with lid (for poaching the eggs)

INGREDIENTS

  • Egg (as many as you would like to eat)

  • Spinach and fresh herbs such as mint and coriander

  • Avocado (optional if you like avocado ;-)

Potato cakes: (makes 6 medium potato cakes)

  • 1 large sweet potato

  • 1/2 cup coconut flour

  • 1/4 cup breadcrumbs

  • 2 spring onions

  • small handful of fresh mint

  • 2 tablespoons soy sauce

  • 1 teaspoon of miso paste

  • sunflower oil

  • 2 teaspoons olive oil

  • 1 egg to bind

    Salsa:

  • 2 large tasty tomatoes

  • 1/2 red onion or 2 small red shallots

  • 1 lime

  • sesame oil

  • small red chilli - to taste

  • 1 small garlic clove

  • small piece of fresh ginger
