Mince Pies and Frangipane Fruit Tartlets

EQUIPMENT -

  • 2 x mince pie tray

  • round pastry cutters, but if you dont have one a glass will do.

  • star cutter (optional) or another shape of choice.

  • zester

  • wire rack

  • fork

  • rolling pin

  • mixing bowl x 2 is best

INGREDIENTS

Pastry

250g plain flour + a little extra for dusting

125g sugar (caster or granulated)

125g unsalted butter

1 egg

Frangipane

60g Sugar

60g Ground Almonds

60g Unsalted Butter

1 egg

1 tbsp plain flour


Fillings

1 x large jar of mince meat

1 x Orange

Optional ingredients to jazz up your mince meat - eg. rum, brandy, chopped nuts, apple, grated chocolate, grated fresh or stem ginger.

Fresh fruit - (eg 2 x peaches, or 1 large handful of berries, such as strawberries and blueberries)

Extra butter, for greasing trays

Icing sugar for dusting (optional)


IF YOU CAN’T SOURCE THE MINCE MEAT:

CHEAT MINCEMEAT: Mix together the following ingredients.

200g marmalade

150g dried mixed fruit

2.5 teaspoons mixed spice

20g butter (grated)

2 tbsp muscovado sugar (or another brown sugar is ok)

1 tbsp brandy /rum (optional)

METHOD:

Pastry

  1. Butter, sugar and flour - using the rubbing in method make in to breadcrumbs.

  2. Add the egg and form a dough.

  3. Rest in the fridge

  4. Grease baking trays and dust with flour

Mince Pies

  1. Pimp up your mincemeat.

  2. Rollout the pastry, place in trays, add mincemeat, and top with a lid.

  3. Rest in the freezer.

  4. Bake at 160* for approximately 25 minutes

Frangipane tartlets

  1. Mix all the frangipane ingredients together

  2. Roll out the pastry and place in trays, freezer

  3. Add the frangipane mix and top with fruit

  4. Place in the oven - 160* for 20 minutes

Mince Pie Frangipane Tarts

Roll out the pasty and place in trays

add a small spoon of mincemeat

top with frangipane

Crustless Frangipane Tarts

Simply add the frangipane mix to the tart tray and top with fruit.
