Beginner’s guide to fresh pasta shapes
The Pasta Masterclass!
In this cooking class experience you will learn how to make a semolina based pasta, no eggs in this one.
You will start by kneading the dough, a gentle work out, and a chance to chatter as you knead.
The dough (any maybe you) will then need a little rest, giving time to make, and compare two pestos; the traditional Genovese Basil Pesto and a Rocket and Walnut Pesto, wonderfully peppery and which people are often delighted by. If pesto’s aren’t your thing, dont worry, there are other salsas and sauces that can with it. Just let me know.
You will then have the opportunity to do some blind olive oil tasting, an experience in itself; providing skill and knowledge for life.
By now the dough will have now rested, the prep is done, drinks topped up and you can relax, gather around the table to get creating and shaping your pasta. There will be at least 3 different pasta shapes. Firstly trofie, which is a short thin twisted pasta which originates from Liguria in Northern Italy, traditionally paired with the world famous Genovese pesto. You will also learn how to make the orecchiette; little ear shapes, traditionally from the South of Italy and Cavatelli also from the south of Italy. The shaping of the pasta is a wonderful time, it brings out the chatter and conversations flow.
Finally, you will learn some top tips of how to cook the pasta pesto the traditional Italian way.
Of course you get to eat, taste and delight in a truly homemade Italian meal.
Throughout the expereince you will be receiving several hints, tricks and food inspiration.
There are also opportunities to split in to teams to allow for friendly competition!
For the inperson private group classes, a green salad, fresh bread and olives will be served with your pasta. Folowed by Flourless Almond Chocolate cake served with Mascarpone.
Each participant will come home with a certificate and the recipe to create the dishes again and again!

About your chef Jinny, and her love of Italian Food
Jinny loves Italian food and has spent many months cooking, sailing and exploring mainland Italy and her beautiful surrounding islands. Her love of Italy then took her to ICIF - the Italian Culinary Institute for Foreigners, where she spent several months honing in her Italian culinary skills in a castle in Piedmonte. She came away with her Masters in Italian Cuisine, the next week she was private cheffing for a well known Italian family - the owners of Fiat. She now loves to share the Italian skills and flavours with others.

Once booked I will send you a recipe card with the ingredients and equipment you will need to get ready before the class. If your team are based in the UK, ingredients can be provided.
No pasta machine required.
